I'm new user of Elements -
I typed some text into a photo and the default color was almost matching the background making it difficult to read - -
I couldn't find any way to change the color of the text -
Anyone have any suggestions?

Look at the text tool options bar (where you set the type font and size). At the far right, there is a color chip -- which will look like a black rectangle if your colors are set to the default. Double click on the chip to bring up the color picker.
